Anthocyanins are the tinted pigments in grapes, with the word coming from the Greek root “antos” (flower) and “kyanos” (blue). These pigments are found in both the skin and the pulp.
Anthocyanins are water-soluble pigments that provide the characteristic red color of wine. At 520 nm and under cer- tain conditions, the color is proportional to anthocyanin con- centrations. The proposed method determines ionized and ionizable anthocyanins present in the sample. Anthocyanins polymerized with tannins or other compounds cannot be assayed with this method.
